Kuku Sabzi

Nowruz is the Persian New Year, celebrated around the first day of spring. In keeping with the dream of spring, we made Kuku Sabzi, a Persian herbed frittata like dish. Sabzi refers to the greens in a dish, here a mix of cilantro, fenugreek, chives, and parsley. You can use fresh herbs or our dried mix. The frittata is finished with barberries and walnuts and when combined with the creaminess of the eggs and herbs create a wonderful array of textures in this savory treat. Enjoy with slices of bread and yogurt.

 

Ingredients:

1/2 Cup dried Sabzi
3 Eggs
3/4 Tsp Baking Powder
1/2 Tsp Turmeric
Salt to Taste
2 Tbls Walnuts, chopped and toasted
2 Tbls Barberries
Olive Oil

 Directions: 

Soak Sabzi mix in warm water for a few minutes. Drain well.n a bowl, beat eggs with baking powder, turmeric, and a healthy pinch of salt. Fold in sabzi, walnuts, and barberries.

Heat a skillet and pour enough olive oil to cover the bottom and sides.

Add the egg batter, rotating the pan so that it evenly spreads. Cover and let cook until most of the egg has set, about 6-8 minutes.

Remove the lid. Invert a plate on a pan and flip the egg onto the plate. The bottom should be on top. Slide it back into the pan to finish cooking. Garnish with extra barberries and serve.
