Ice Tea Pops

Turn your favorite tea into a frozen treat. Today, we're making Lavender Earl Grey and Hibiscus Heaven popsicles. 

It's important to remember that freezing can dull down flavors so you want to make a concentrated tea. Make sure to taste test your tea before freezing and adjust to create an intense flavor. 

Our popsicle molds each measure 2 ounces. For a single popsicle, we brewed 1 tsp in 2 ounces of water. We then strained the tea, mixed in 1 Tbsp simple syrup, filled the mold and froze for at least 6 hours.

Knowing the ratio for a single popsicle means you can make several flavors of popsicles in one set of molds or scale to make bigger batches of the same flavor. 

You can also use flowers and spices as natural food dyes. We added Butterfly Pea Flowers to the Lavender Earl Grey to make indigo popsicles. The hibiscus in Hibiscus Heaven gives it its vibrant red color. 

Adjust for your sweetness preference - we found that 1 Tbsp of simple syrup was the right amount to make the Lavender Earl Grey sweet while keeping the tart edge of the Hibiscus Heaven.

You can either brew with hot water or cold brew - we preferred brewing green teas with hot water and letting it cool and cold brewing black teas and herbals. 

Experiment with a variety of teas  - we even tried Genmaicha for a sweet and savory Pop that was reminiscent of sticky rice desserts. The possibilities are endless - all you need is time and a safe spot in your freezer.
