This aged fish sauce gets its name from the Iwashi sardine, a bigger and fattier fish than most sardines The fish sauce is aged 2 years before being refined and then aged for another twelve months in Japanese whiskey barrels. The resulting fish sauce is more subtle and delicate with a hint of sweetness.
