Though, in America, we often call these sweet and spicy sticks cinnamon, the rest of the world recognizes this as cassia. The quills are made from the harder, outer bark of the Cinnamomum cassia tree, a different tree than the true Cinnamon tree. While they have similar appearances and flavor profiles, Korintje cassia comes from Indonesia and has a stronger, sweeter flavor and is often used in desserts in combination with other warm spices. Try using cassia sticks to mull cider, wine, or use as a stirrer for a hot toddy.
