The dried seed of the  St. Lucie Cherry tree, mahleb (or mahlab) is often used to flavor desserts and baked goods like tsoureki, a Greek bread made for Easter, and many sweets for Ramadan like Maamoul or Ma'arouk. Mahleb has a cherry almond like flavor and is usually kept whole until needed, to maintain its flavor, and is then ground before being added to batters. Mahleb pairs well with fruit, orange blossom water, rose water, nuts, cinnamon, sesame, anise and apricots. Mahleb is often used to make breads, semolina desserts, and date cookies.
