Moroccan Style Red Lentil Soup Starter
Red lentils and spices combine to make a flavorful, smokey soup. Just add aromatics and broth or cook with just water and serve with rice. Starter comes with a recipe card.

Ingredients:
1/2 medium onion, diced
1 stalk celery, diced
2 carrots, diced
2 cloves garlic, minced
1 can diced tomatoes
4 cups broth or water
2 Tbls Olive oil
Salt to Taste
1 Soup Kit
If you are using the stove top method, soak the lentils for at least an hour and then drain. If you are using a slow cooker or Instapot, simply rinse and drain the lentils. Heat a pan over medium heat and coat with olive oil. Saute onions, celery, carrots until they start to soften. Add garlic. When you can smell the aromatics, pour all the spices from the soup kit into the pot and stir. Next add the can of tomatoes, broth, lentils, and salt to taste. Let the mixture come to a boil, lower heat to a simmer, cover and let cook for 30 minutes. (Instapot – high pressure, 10 minutes to cook, 10 minutes to open.) Lentils are cooked when they are tender. You can thicken the soup by removing 1/3 of the mix, blending, and returning to the pot. Garnish with yogurt and fresh cilantro or bulk up with a can of rinsed chickpeas or chicken, just remember to adjust your salt.
