Caraway has a milder anise flavor that is pleasing to those who usually do not care for licorice. You can find caraway topped on rye bread, in sauerkraut, or seasoning gravlax. It makes up the Tunisian spice mix Tabil, along with coriander, cumin and red pepper, which is used to flavor couscous, grilled vegetables, tomatoes, and flatbreads. Caraway pairs nicely with cheeses, particularly Havarti and Cheddar.
