True cinnamon comes from the Cinnamomum tree. The quills are formed from the inner bark, are softer, and can be broken by hand. Dry toast cinnamon pieces along with whole black pepper, cumin, and coriander, grind and mix with turmeric and cayenne for a quick spice mix great for curries. You can also throw a piece into warm oil along with other aromatics to flavor a pot of rice.
True cinnamon is often called Canela or Ceylon cinnamon.
