Thinly sliced Yidu chiles are dried, creating long and delicate bursts of red, fresh flavor. Use as a garnish for finishing touch of medium heat. Try on top of ramen, soft scrambled eggs, fried rice, or a sweet corn and lemongrass soup. Use as is, toast, or rehydrate in warm water for 15 minutes. The grassy, slightly smokey flavor also makes a great chile vinegar - combine with salt, sugar, vinegar and let sit for at least seven days.
