Cloves are the dried flower buds of an evergreen tree native to Indonesia and found in India, Sri Lanka, Madagascar, and other countries. Cloves has a hot and pungent flavor and can be used in both sweet and savory dishes. You’ll find cloves in pumpkin spice blends, garam masala, berbere, jerk seasoning, Chinese 5 spice, among other blends. Taste it in apple pie, mulled wine, seafood dishes, and spiced pork loin. Clove pairs well with cardamom, black pepper, nutmeg, cinnamon, cassia and bay leaves. Chew on a clove as a breath freshener. Steep with your favorite black tea. Add to your pot of rice as it cooks. Make a pomander by studding an orange to decorate for the holidays. For more function over form, make an onion pique where you use cloves to pin bay leaves to an onion for broths or consommés.
