Coriander is the seed of the cilantro plant and has a sweet, citrusy flavor. It pairs well with cumin, cilantro, fennel, cinnamon, and cayenne and can be found in harissa, garam masala, dukkah and advieh. Use to flavor beer, sausages, pickling and meat brines, and roasts. Coriander’s natural sweetness is brought out when combined with fruits in jams or pies. Coat goat cheese with toasted, cracked coriander and drizzle with honey.
