Guajillo Chile

Guajillo chiles are dried Mirasoles chiles. These chiles have a mild heat with a sweet fruity flavor and are often combined with Ancho and Pasilla to make moles. They can be dry toasted or rehydrated and blended with aromatics and spices to make a sauce. Guajillo chiles can be found as an ingredient in chilaquiles, salsas and tamales.
