Hatch New Mexico Chile Flakes

The Hatch New Mexico Chiles are one of the chiles developed at New Mexico State University by Dr. Roy Nakayama and are a part of the Big Jim chile family, named after their cultivator, Jim Lytle. They are grown in the Hatch region and have a mild heat to them. Use as you would any crushed red pepper flakes, by frying in oil. sprinkling on pastas, pizzas, and vegetables, or infusing honey.
