Hibiscus flowers are often used in teas for the beautiful red color they impart. In Mexico, the tea is sweetened and iced for agua de Jamaica. And in Jamaica, hibiscus is used to make jam. Ground or whole, use these flowers whenever you want to develop tartness in your dishes from poaching fruit, infusing alcohol, or making vinaigrettes.
