This meal kit is the building blocks for waghareli khichdi, a spiced rice and lentil dish. We provide the recipe; simply add your own onions, garlic, potatoes, and peas for a warm comforting meal.
Ingredients: Basmati Rice, Tur Dal, Organic Spices
Recipe for 4 Servings:
1 Tbls unsalted Butter
1 Tbls Oil
1 medium onion, chopped
3-4 cloves of garlic, minced
2 red potatoes, peeled and cubed
2/3 cup frozen peas
2 green chiles like Cayenne or Thai Bird, minced, for extra heat
Salt to Taste
*You can cut down on cooking time by soaking the lentils for at least an hour before cooking.
Directions: Rinse the rice and lentils in running water. Melt 1 tbls butter and 1 tbls oil in a pot over medium heat. Add Spice Pack 1. When the spices start to sizzle, add the onions. When the onions have soften, add in the garlic and chiles. When you can smell the garlic, stir in the potatoes and peas. Cook for 5 minutes. Add the rice and lentils and cook for another 5 minutes. Add 6 cups water, Spice Pack 2, and salt to taste. Cover and let simmer for at least 30 minutes, until the lentils are soft. For pressure cooker and Instapot, use 2 1/14 cups water. For pressure cooker, wait for 2 whistles and then shut off the heat. For Instapot, set it to high pressure for 5 minutes.
