A quick and easy one pot meal, our Mediterranean style soup kit has the lentils, aromatics, and herbs for a delicious meal. Finish with a squeeze of lemon, bulk up by adding rice or sweet potatoes, or enjoy as is.
Ingredients: Whole Red Lentils, Carrot, Onion, Tomato, Spinach, Celery, Bell Pepper, Herbs
1 Soup Kit
4 Cups Water or Broth
Salt to Taste
Combine lentils with water or broth and 1-2 tsps of salt. Bring to a boil, reduce heat, cover and let simmer for 20-30 minutes. Check lentils - they should be tender. Add more liquid if needed. Finish by serving wtih a squeeze of lemon, fresh parsley, and crusty bread.
Add 1 cup diced tomatoes with the lentils at the beginning of cooking with salt to taste.
Rinse 1/2 cup of rice and add after 10 minutes of simmering with salt to taste. Once the lentils and rice are tender, shut off heat and let the soup sit for ten minutes, allowing the rice to soak up more broth.
Add 1/2 cup sweet potatoes cut into 1/2 inch cubes at the beginning of cooking with salt to taste.
