Walking through the spice bazaars of Istanbul, we kept seeing among the bags of sumac and trays of baklava, a spice blend called Ottoman spice. Layers of chile, some sweetness, some tartness, a little smoke, the spice mix quickly became a favorite. And then we came back to America and couldn’t find any. So we set about blending our own and it comes pretty close. Use it as your new go to grilling spice, add to rice dishes for extra depth, or simply add oil and salt and load onto bread.
