Panch Phoron, a Bengali 5 spice, works great whole or ground, just make sure this spice mix feels some heat. You can either dry roast the spices in a pan and then add to a pan of potatoes before roasting or bloom them in oil before adding onions, garlic, tomatoes and cauliflower for a vegetable curry. For anyone who loves Indian flavors, but not the heat (though you can always add that later!)
