Saffron is the stigma of a purple crocus flower. Each flower yields 3 stigma which have to be hand picked and approximately 4600 flowers will yield just one ounce of saffron, which explains why it is one of the most expensive spices. Luckily, saffron is potent in color and flavor and you can use a small amount for great results. Saffron is often used for the its bright orange-yellow color it gives off when soaked in hot liquid. Our Spanish saffron is Coupe #1, the highest grade given to Spanish saffron. Add saffron to paella and other rice dishes, seafood stews, and marinated vegetables, roast chicken, and tomato soup.
