Crush the dried leaves of spearmint to release its sweet aroma. Steep on its own, with other herbs, or your favorite tea. For a savory treat, combine with other herbs like parsley, oregano and cilantro to make a dressing or marinade. Blend a small amount with hot peppers, smoked paprika, garlic, onion and coat meat or vegetables for grilling. Add to a gremolata of lemon, parsley and garlic. Combine with bread crumbs and cheese for a bright finish to pasta dishes.
