Tarragon, or dragon’s wort as it is called, has an anise like aroma with a peppery green flavor. French Tarragon has the best flavor. It is a component of les fines herbes along with chervil, parsley, and chives and seasons poultry, eggs, and salads. Add to cream sauces and egg salads, brush with butter on top of bread, pair with black pepper and mustard for seafood dishes.
