Our single origin Urfa Biber has been a long part of Turkish cuisine, particularly in kebabs. It has a mild heat that builds its intensity with notes of chocolate and raisin and a smokey flavor. Add to hummus, baba ganoush and other dips, sprinkle on top of pizzas, season olive oil to dip bread in, flavor kofte, spice nuts, use with eggs. It will quickly become one of your favorite spices to use as a table pepper or to blend with other spices like garlic, onion, cumin, and sesame seed.
Urfa Biber goes through a two step drying process. The chiles are laid out to dry in the sun during the day and then covered and wrapped overnight to encourage sweating. As a result, the chiles retain some of their moisture, allowing them to maintain their flavor longer. It also means the flakes tend to clump together and so sunflower seed oil and salt are added to help minimize this.
