Hing is back and in a different form. This Wild Hing is harvested from a mountain shrub in Afghanistan. Known also asafoetida, its uncooked form has a strong, pungent smell but once add to heat and fat like ghee or oil, hing takes on an onion, garlic like flavor. Add a pinch to pickles, vegetables dishes, lentils, and thadkas.
